This lunch is so easy because you basically already made it if you made this week’s recipe for muffins! We wrapped up a couple banana zucchini muffins that Lisa made (see her awesome vegan, gluten free recipe here) and paired them with other breakfast favorites like yogurt. Keeping it easy, we added a full pear and some walnuts for extra filling protein. Top it off with some Veggie-Go’s for the perfect lunch for breakfast lovers.
