Easy Pasta Salad
This simple salad is perfect as it is or with the addition of additional veggies, protein or vegan cheese.
1 pound tri-color rotini pasta
1 can black olives
2 cups assorted color cherry tomatoes, halved
2 cups broccoli florets, blanched
½ red onion, chopped
1 – 11/2 cups good quality organic Italian dressing
Boil rotini until al dente. Drain, rinse under cold water, and drain again. Place in a large bowl. Add olive, tomatoes, broccoli and onion and toss. Add 1 cup dressing and toss. Cover and refrigerate until serving, adding additional dressing is salad is dry. Makes about 6-8 servings.
