Packing lunch can become a fairly daunting task – but I’m a firm believer that it doesn’t have to be!
Half the battle is making time to pack lunch in the morning before you have to hit the road. Don’t get me wrong, I love a beautiful, early morning, and would choose a sunrise over a late night anytime. But I’ve always thought it was a little too much to ask for me to prepare for the entire day in twenty or thirty minutes before I head out, family in tow.
But luckily I have a super simple solution to this problem!
Pack for lunch while you clean up dinner!
This idea has been working so well for me, and I think it’s because of a few key reasons:
- You only have to clean up once. Rather than getting out all your cutting boards and getting crumbs all over your counter in the morning (which I usually leave for “future me” to deal with) you can combine this clean up with your dinner pots, pans, and dishes.
- You can prep leftovers with ease. If you have a few portions left of whatever you cooked for dinner, it can go straight into lunch containers rather than one big container that has to be split up again later. Even if you don’t have enough to make all the lunches you need for the next day, you can still incorporate it as a side dish and skip one more prep step!
- You can spend a minute to think about what you’re doing. In the morning when I’m just waking up and I’m still groggy, I have trouble thinking of what to pack in lunch boxes. I usually end up packing too much or too little, and often don’t want to expend the time and energy to slice or dice anything and end up with very basic, boring lunches. But when I’ve just had dinner and don’t have anything left to do in the day except relax – I can spend the time to think of what would be healthy, delicious, and practical to pack up for the next day.
