Quinoa Salad

Quinoa Salad
Spring/Summer is a great time to start incorporating more salads into your diet. We are all about fresh, clean ingredients AND saving you time in the kitchen to help you do just that!  This bright Quinoa Salad utilizes the flavors of the season and is so simple to make. 

   

Ingredients:                                                                                                                                                        

2 C cooked quinoa                                                                                 

1 can black beans                                                                                  

1 medium red pepper                                                                          

1 mango                                                                                    

1 avocado                                                                                 

1/4-1/2 C chopped cilantro                                                                                

juice from 2 limes                         

Directions:

Dice pepper, mango and avocado

Gently combine all ingredients in a large mixing bowl and serve chilled
