This is a super simple recipe that is SO much better than store-bought jam, and it’s sweetened entirely by the fruit itself. That’s a little trick we learned making Veggie-Go’s – you don’t have to add sugar to make something delicious, just using the right combination of produce can get you exactly what you want. In this jam, I use sweet strawberries and apple juice, and then a little bit of tart lemon to complement the sweetness.
The recipe is so easy, and I made it with my 10-year-old friend, Elle, who was a big help!
Strawberry Chia Jam
Cooking time: 25 minutes
Makes: 1 ½ cups jam, perfect amount for a mason jar
- 10-12 oz frozen strawberries
- ¼ cup Apple Juice
- 1 Tbs Lemon Juice
- 1 ½ Tbs Chia Seeds
- In a medium saucepan, combine frozen strawberries and apple juice. Reduce over medium heat for 5-10 minutes.
2. Once strawberries have broken down and liquid has reduced by half, remove from the heat.
3.Stir in chia seeds and lemon juice. Let sit for 15 minutes for the chia seeds to absorb moisture and plump into chia jelly.
4. After it has rested, store in an airtight container in the refrigerator for 1 to 2 weeks.
Elle and I slathered up some toasty bread with our jam the minute it was done, but there was still plenty left over for sandwiches, waffles, yogurt parfaits, and ice cream sundaes for the rest of the week!
