These fruity pancakes are great as handheld treats because they don’t need syrup or butter, they taste delicious as is. So I make a big double batch on Sunday morning, gorge with the fam for breakfast, then pack up the leftovers for the rest of the week! These cakes are good for breakfast in the back seat of the car, lunchbox entrees, or snacks before soccer.
And they keep packing those berry antioxidants every time you snarf one down! Can’t beat that trifecta; easy, handheld, and healthy!
